Instructions
  1. Grease or line a medium (8″x4″) or large (9″x5″) loaf pan.
  2. In a large mixing bowl, mix boiling water and oats thoroughly.
  3. Add butter, honey, brown sugar, raisins, and salt, and let cool to about 130 °F (55 °C), or until warm (but not hot) to the touch.
  4. Add yeast, eggs, and 1 cup flour, and mix well by hand or using a stand mixer with a dough hook attachment.
  5. Continue to add flour 0.25 cup at a time, mixing in thoroughly with each addition. Stop adding flour when the dough starts to cleanly come away from the sides of the bowl; it should be somewhat soft.
  6. Place dough in a greased bowl, cover with plastic wrap or oilcloth, and let rise 1 hour.
  7. Roll dough out into a rectangle about 8″x12″ and spread with melted butter, then sprinkle with cinnamon and sugar.
  8. Turn up one of the 8″ edges and continue rolling the dough jelly-roll style. Pinch the seam closed, then place loaf seam-side down in prepared pan.
  9. Cover pan with plastic wrap or oilcloth and let rise 45 minutes.
  10. Bake at 375°F (190°C) about 40 minutes, until brown.
  11. Turn loaf out onto a rack and brush with melted butter, and let cool.
